​ In December 2019, Bobbi and Jeff Seger opened the doors to Water Street Waffle Co. in historic downtown Belton, Texas with one clear goal — to create a welcoming place where people felt at home and well fed with quality food. 

Not long after opening, the pandemic reshaped everything. Like many small businesses, Water Street had to adapt in real time, navigating unfamiliar territory with no clear roadmap and no way of knowing what tomorrow would bring. Building the business through to-go orders and the steady support of the local community, those early days were about resilience, creativity, and building trust one guest at a time.

With time and the help of their two daughters, Water Street grew into the brunch destination they had imagined from the beginning — a place filled with conversation, connection, and hospitality that feels personal. Years later, that same spirit and grit led to expansion into downtown Temple and, most recently, New London, Connecticut, with each location rooted in the values of family, quality, and community that started it all.
